Jefferson Dietician Emily Rubin Talks Gluten-Free Diets to ABC
Jefferson Dietician Emily Rubin was recently featured in a Channel 6 ABC story on gluten-free diets.
Celiac disease is an autoimmune disease of the small intestine in
which the body cannot tolerate gluten – a protein found in wheat,
barley and rye and, by extension, in a wide variety of everyday foods.
Many of the symptoms, complications and conditions associated with
celiac disease may improve with a gluten-free diet.
Some people, however, have been going on a gluten-free diet in order
to eat healthier and lose weight. Rubin advises against this, since
many foodmakers add in extra fat and sugar and have less fiber,
according to Channel 6 ABC.
"There's no reason you can't just buy fresh fruits and vegetables
and do whole wheat products and oat-based products and be just as
healthy as someone who is gluten free," Rubin said.
